Improv Night: White Bean Eggs Benedict

A Friday night treat to celebrate my first week at my new job: white bean patties (Great Northern beans, onion, garlic, serrano peppers, olive oil, Kosher salt, fresh ground pepper, an egg, panko breadcrumbs) topped with tomatoes, olives, artichokes and capers, served with eggs over-easy and homemade hollandaise sauce, and lettuce from my mom’s garden.
